Intended Use: Ideal for filleting fish and poultry. Can also be used to cut semi-thawed frozen foods.
Features: This deba knife, forged by one of Tosa's premier blacksmiths, employs Hitachi Yasugi Blue Steel No.1 for its cutting edge. The thick steel is hammered and forged, resulting in a dense structure. Meticulous heat treatment maximizes the characteristics of Blue Steel No.1, making this knife perfect not only for splitting fish heads but also for poultry dressing and cutting semi-thawed frozen foods. It is designed for easy sharpening and is our recommended double-edged deba knife.
Sharpness: As this knife is made from steel, it is coated with a rust-preventive varnish. Initially, this may reduce its sharpness compared to its potential, but the varnish will wear off with use. Sharpening the knife will allow you to experience its true cutting ability.
Caution:
- Each knife is hand-forged and sharpened, which may result in minor scratches and the peeling of the oxidized film on the blade. These are not considered defects.
- As a hand-forged product, variations in size and slight distortions or bends in the blade may occur.
- Not dishwasher or drying machine safe.
- Being made of steel, the knife will rust. However, its kurouchi finish makes rust less noticeable. Please wipe off moisture diligently after use.
