      AUS-10 is a high-carbon stainless steel

AUS-10 is a high-carbon stainless steel produced by Aichi Steel in Japan. It is considered an upgraded version of AUS-8, with higher carbon content, offering improved hardness, edge retention, and overall performance. AUS-10 is often compared to VG-10, sharing similar characteristics in terms of sharpness and durability, while still being more affordable. The addition of elements like molybdenum and vanadium enhances its toughness and corrosion resistance, making it a popular choice for mid-range to high-end kitchen knives.

      Key Features:

Composition: AUS-10 contains 0.95-1.10% carbon, 13.00-14.50% chromium, 0.10-0.30% molybdenum, and 0.10-0.25% vanadium. These elements contribute to its excellent wear resistance, edge retention, and corrosion resistance.

Hardness: AUS-10 typically has a Rockwell hardness of HRC 59-61, which gives it better edge retention and sharpness compared to softer stainless steels.

Sharpness: AUS-10 can be sharpened to a fine edge and holds that edge well, making it ideal for precise cutting tasks. The vanadium content contributes to maintaining sharpness for longer periods.

Corrosion Resistance: Thanks to its higher chromium and molybdenum content, AUS-10 has excellent corrosion resistance, making it suitable for humid or kitchen environments.

Toughness: AUS-10 offers a good balance of toughness and hardness, meaning it is less prone to chipping compared to other high-carbon stainless steels, while still maintaining a durable edge.

      Maintenance:

Ease of Sharpening: AUS-10, while harder than AUS-8, is still relatively easy to sharpen with proper tools. Regular maintenance will keep the blade sharp for a long time.

Corrosion Resistance: Due to its stainless properties, AUS-10 requires less maintenance than high-carbon steels but should still be cleaned and dried after each use to prevent rust or staining, especially after contact with acidic or salty foods.

      Summary:

AUS-10 stainless steel offers an excellent balance of sharpness, durability, and corrosion resistance, making it ideal for both professional chefs and home cooks. With its higher carbon content and improved hardness over AUS-8, AUS-10 is a great choice for those seeking high-performance knives that are easy to maintain and sharpen.
